We pour our whole selves and our desire for sublimity into every element of our wine. From the planting of that first cutting to the last sip that lingers on your palate, we nurture, hone, and perfect our process until our vision is palpable.
With every innovation available, we strive to create impeccable wine—rich in flavor, terroir, and history. Without passion, you have a wine that lacks depth and soul. To realize our vision, we refine our methods and invest in the finest tools and techniques.

Fragrant red, black, and blue fruits emerge, complemented by notes of cedarwood spice, graham-cracker crust, and a hint of wild herbs. Full-bodied with robust tannins, the wine boasts a finish marked by dark chocolate notes. This is a powerful red with a formidable tannin structure that will benefit from time in the cellar, best enjoyed between 2027 and 2035. Produced from the Kaufman family estate vineyard at the base of Atlas Peak, the wine comes from the 'Eva's' block on the flatter section of the vineyard. It is crafted by Ashley Hepworth.

A perfumed and expressive red wine, offering fragrant notes of wild herbs, sage, and violets, alongside hints of fine cocoa powder and toasty oak. Juicy and medium-bodied, it is framed by lacy tannins and balanced by bright acid tension and crushed-stone minerality. The tannins build gracefully toward the finish, leaving a lingering stony character that remains in the empty glass, beckoning another pour. Produced from the Kaufman family estate vineyard at the base of Atlas Peak, the wine comes from the hillside 'Jonas' block and is crafted by Ashley Hepworth, formerly of Joseph Phelps.

“Estate bottled” has two meanings for our family at Old Soda Springs. The first is quite technical: to be labeled “Estate bottled,” a wine must meet strict federal standards. It must be made entirely from grapes grown on the land the winery owns or controls. Further, it must be produced, aged, blended, and bottled on the same estate—without ever leaving the property at any point in the process.
To us, “Estate bottled” means even more. It means family, history, and care. It means we’ve poured our heart into every step, from planting the first cutting to the lingering fruit on your palate. We’ve crafted an exceptional wine with intention, and we’ve rooted it in the land and our legacy.

French oak barrels give our wine something you won’t find in those fermented in stainless steel. Oak barrels are steeped in tradition. They’ve been used for centuries to make the world’s finest wines because of the depth and dimension of flavor they add to the wine within.
Each barrel is a unique work of art—crafted from the finest oak and gently steamed to draw out subtle, refined notes of vanilla, spice, and toasted almond. We work with some of the most respected cooperages in France—including Taransaud, Sylvain, and Darnajou— to produce barrels built to our specifications.
We use new French oak for our Cabernet Sauvignon to ensure the purest, most expressive character. If you pay close attention, you can taste the history, craftsmanship, and quiet reverence in every sip.

An optical sorting machine protects the integrity of our fruit by selecting only the finest grapes for the next stage of winemaking. After our grapes are hand-harvested, each one passes through this high-speed sorter, where cameras scan for color, size, and ripeness. Anything that doesn’t meet our winemaker Ashley’s standards is gently removed with a precise burst of air. It’s a small but powerful step that helps shape the clarity, richness, and expression of our cherished wine.

We use free-run juice at Old Soda Springs because it’s the purest expression of the grape. Free-run juice flows naturally from the fruit under its own weight—without pressing—and delivers a softer, more nuanced flavor, full of texture and vitality.
While pressed juice adds volume, it often brings harsher tannins and less finesse. We believe in letting the grapes express their truth. That’s why nearly 100% of our wine comes from what flows freely.
